High Fiber Banana Muffins Ingredients:
3 very ripe bananas
3/4 cup organic maple syrup
1/2 cup melted coconut oil
1 teaspoon vanilla extract
1 cup almond flour
1 cup GF rolled oats
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon cinnamon
1/2 teaspoon salt
2 tablespoons chia seeds
dark chocolate chips
Directions:
Preheat oven to 350 degrees
In a bowl, mash 3 bananas, add maple syrup, coconut oil, and vanilla extract. Mix well with a spatula
In another bowl, mix almond flour, rolled oats, baking powder, baking soda, cinnamon, salt, chia seeds, and lastly chocolate chips
Add mixture into greased (I use butter) baking pan or cupcake pan.
Bake for about 30 minutes or until fork comes out clean
Top with Greek yogurt or add peanut butter
