High Fiber Banana Muffins Ingredients:

  • 3 very ripe bananas

  • 3/4 cup organic maple syrup

  • 1/2 cup melted coconut oil

  • 1 teaspoon vanilla extract

  • 1 cup almond flour

  • 1 cup GF rolled oats

  • 1 teaspoon baking powder

  • 1 teaspoon baking soda

  • 1 teaspoon cinnamon

  • 1/2 teaspoon salt

  • 2 tablespoons chia seeds

  • dark chocolate chips

Directions:

  • Preheat oven to 350 degrees

  • In a bowl, mash 3 bananas, add maple syrup, coconut oil, and vanilla extract. Mix well with a spatula

  • In another bowl, mix almond flour, rolled oats, baking powder, baking soda, cinnamon, salt, chia seeds, and lastly chocolate chips

  • Add mixture into greased (I use butter) baking pan or cupcake pan.

  • Bake for about 30 minutes or until fork comes out clean

  • Top with Greek yogurt or add peanut butter
